What's your favorite one? We have an apple cake we like a lot, which I can't find at the moment online, sigh, and this butternut soup recipe, which we make all the time.

Nah but okay seriously, I saw a recipe for a butternut squash soup that had apples in it once and it sounded rally good, but I didn't wind up using it because we were low on apples at the time. Soups are easy to make up, though.
A simple cube-and-roast butternut squash is really tasty as a side dish, too; nutmeg makes a good seasoning for it. Mashed squash (like mashed potatoes except squash) is also a tasty and simple side.
I probably have apple-based recipes in my bread recipe book if you're interested and want me to grab them for you.

2 cups milk
3 eggs
2 T safflower oil
1 c whole wheat flour
1 t baking powder
1 t cinnamon
1 c chopped apples
Soak the oatmeal in the milk for 5 minutes. In a separate bowl, beat the eggs and oil. In another bowl mix the flour, baking powder, and cinnamon. Add the dry ingredients to the egg mixture, then stir in the oatmeal mixture and apple. Lightly grease a griddle or frying pan and heat until a few drops of cold water sprinkled on the pan dance. Drop pancake batter 1/4 cup at a time onto the griddle. Bake and turn to bake on the other side.
(Yes, it is supposed to not include sugar, but I'm sure it would taste just fine if you added sugar.)
I also liked these acorn squash muffins, for which I'm sure you could substitute butternut squash, or any other puree-able squash.
