Take 2/3 of a medium butternut squash (Any winter squash), peel and cube, apprx. 1in. cubes, microwave until fork-soft.
Meanwhile cook something pig, ham, bacon, sausage, (we use 2-3 oz people) in a pan, reserve a bit of fat if there is any. Roast an onion, a pepper, or something else.
Shred 3 c spinach.
Toss butternut into the pan, with a bit of butter if using non-fatty pig product. cook until you get a bit of mallard duck... I mean malliard effect, browning, toss in the spinach until wilted.
Add soft cheese (blue, goat, etc.) at table.
T. adds:
we use 2-3 oz per person

yes, tho i tend to use olive oil and it works fine
need to salt, and a green herb
